1½ lbs. (3-4 medium) boiling potatoes
1 lb. kale (10-15 large leaves)
1 leek or 4-6 green onions (scallions) (1 cup chopped)
1 cup half-and-half or milk
¼ cup (½ stick) butter

1. Rinse the potatoes and kale until they're very clean but leave whole and unpeeled (you may want to cut the ends off the kale stems but do not remove the leaves from the stems). Place in a large pot and cover with water. Bring to a boil, add 1-2 tsp. salt, and boil until tender (15-20 minutes).

2. While the potatoes and kale are boiling, chop the leeks or green onions, discarding the roots and dark green leaves of the leeks (if using green onions, you can use both white and green parts). Place in a small pot, cover with the half-and-half or milk, and bring to a simmer over very low heat. Cover and cook until very soft (10-15 minutes).

3. When potatoes and kale are tender, drain and separate them. Mash the potatoes with a potato masher or fork, with the skins on (they don't need to be totally smooth). Place them in an ovenproof dish and keep warm in a 200º oven.

4. Finely chop the kale (including stems). Add the kale to the warm potatoes and mix well.

5. When leeks or scallions are soft, add the entire mixture to the potatoes and stir well to combine. Season with salt and pepper to taste. Immediately before serving, top with pats of butter.

Colcannon is a traditional Irish dish that can be made with kale or cabbage. It has all the creaminess of mashed potatoes with the heartiness of green vegetables. The original recipe asked for boiling the potatoes and kale separately, but doing it all in one pot simplifies things! You can also steam the potatoes and kale together in an Instant Pot. Feel free to adjust the ratios to your taste.
