1½ cups spooned and leveled flour (205 grams)
1 tsp baking soda (cut in half for higher altitude baking)
½ tsp salt
¾ cup dark chocolate chunks (131 grams or more)
½ cup sugar (83 grams)
1 cup mashed, VERY ripe bananas, 4 medium or 3 large
1 large egg room temperature
½ cup vegetable oil (could use a bit less)
1 tsp vanilla extract

Directions:
Directions:
Preheat the oven to 375º. Line a muffin pan with 12 parchment paper liners.

Combine flour, baking soda, and salt in a small bowl. Stir in chocolate chunks.
Combine sugar, bananas, egg, oil, and vanilla in medium bowl.
Add dry ingredients and mix just until combined.
Pour into prepared muffin tin and bake 18-20 minutes or until a toothpick comes out clean. Do not over bake.
Cool 5 minutes in the pan before removing and cooling on a baking rack.

Notes:
For mini muffins, bake 14-16 minutes.
For jumbo muffins, bake 20-22 minutes.
They are very good gluten free using gluten free 1:1 flour.
