Tortilla Soup Recipe

64 oz. vegetable broth
1 small can tomato paste
2 C diced fresh tomatoes
1 bunch cilantro, chopped
1 onion, chopped
1 cup black beans
1 1/2" cubes of plain tofu
3 cloves garlic, minced
3 tsp. cumin
2 tsp. chili powder
1 tsp. lemon pepper
grated cheddar cheese
tortilla chips

Sauté onions, garlic and spices in a little oil. Add cilantro,
vegetable broth, tomato paste, black beans and corn. After
adding tofu stir more carefully.

For tortilla chips: cut tortillas into strips and spread on a baking
sheet, place in oven and bake a few minutes until crisp.

Place some avocado, cheese and tortilla strips into a bowl and
ladle hot soup over.

Tofu can be replaced with chicken for meat eaters.
