20 oz shredded hashbrowns, thawed
1 lb sausage, cooked, crumbled and drained
1/4 cup onion finely diced
1/2 red pepper, diced
1/2 green pepper, diced
2 cups cheddar cheese
8 eggs
1 can evaporated milk (12 oz or 1-1/3 cup)
1/2 tsp Italian seasoning or more to taste
1/2 tsp salt
1/4 tsp black pepper

Directions:
Preheat oven to 350º. Set aside half the cheese for the topping. Brown sausage and drain the fat. Place the hashbrowns, cooked sausage, onions, bell peppers and remaining cheese into a 9x13-inch baking pan. Gently mix ingredients together and spread evenly into the pan. Combine eggs, evaporated milk, salt & pepper and Italian seasoning into a bowl. Whisk until well combined. Pour egg mixture over the hashbrown mixture and cover with remaining cheese. Can be covered and refrigerated overnight or bake uncovered 55 to 65 minutes.

Note: If refrigerated overnight, remove from fridge 30 minutes before baking and add 10 to 15 minutes to cooking time.
