1+1/2 lbs green beans
4 oz pancetta or bacon
1+1/2 lbs shitake, cremini orbutton mushrooms (9 cups)
6 garlic cloves,minced
1/2 tsp dried thyme
1/2 tsp salt & pepper
2TB flour
1 + 1/2 cup half & half or cream
5 oz pkg soft cheese with herbs (Borstein)
1/4 cup dry white wine

Directions:
Cook beans in salted water until crisp tender (3-5 minutes).
Plunge into ice water
In a skillet, cook pancetta/bacon until crisp. Remove meat & reserve drippings.
Add chopped up mushrooms, garlic & thyme to drippings. Cook 5-6 minutes until tender. Add meat back in.Then pour over beans in a baking dish & mix well.

In a small saucepan, melt butter then stir in flour. Cook & stir for one minute.
Add half & half & cook over medium heat until thick & bubbly.
Add cheese, stir until melted. Take off the heat & add wine. Pour over beans

Bake 25-30 minutes. Top with fried onions or shallots.
