2 lb sifted icing sugar
1/2 cup milk powder (dissolved)
1/2 - 2/3 cup warm water
1/2 cup shortening (soft - room temp)
1/2 tsp fine salt
2 tsp vanilla
1/2 tsp almond flavor

Sift icing sugar in a separate bowl.
In a large mixing bowl, cream shortening and a cup of icing sugar.
Mix the powdered milk into the water, stir to dissolve and set aside.
Add some water mixture to the shortening, mix, continue adding all ingredients alternately mixing with each addition.
You may need to adjust the salt, flavorings and amount of icing sugar.
It depends how warm your kitchen is for the constancy of icing.
If it is too soft, cool in fridge.
It must be airtight or cover with a damp towel.
I always beat frosting, just before I frost a cake.

Chocolate frosting is made by using sifted cocoa instead of some of the icing sugar.

This icing is truly trial and error, but with lots of beating it is easily made ahead and keeps well for quite a while in fridge as long as is stored in an air tight container.
