½ lb Cured ham hock or similar
1 lb Dry blackeyed peas (plus water to soak)
6 cup Water or chicken stock
1 tsp Salt

Directions:
Directions:
Soak dry peas in water at 3 cup water for 1 cup peas overnight. drain excess water and rinse off peas when peas are soft. Add water or stock to pot. bring to a boil. Add meat and boil for 45 minutes. Add Rinsed peas and salt to pot and boil for 30 minutes. Turn off heat but leave top on pot so peas continue to cook for 15-30 minutes longer.
