4 -6 cups bite size lettuce greens or all Romaine or part spinach
4-6 ounces cubed Swiss cheese
1/2 cup cashew halves or walnuts or pecans
2 T. dried cranberries
1/2 cup diced celery
1 large winter Pear/ peel and dice or slice.

Dressing:
2/3 cup EVOO
1/2 cup sugar
1/3 cup fresh lemon juice
2T. Green Onion
1 tsp. Dijon Mustard
1/2 tsp. Salt

Directions:
Directions:
Add cut up greens to a large bowl. Add celery and cranberries and Swiss cheese.
Chill.

Dressing:
Mix dressing ingredients in the blender until smooth and creamy.

At serving time, add cashews to salad and gently mix in just enough dressing to coat.
