1/2 head Iceberg Lettuce
1/2 head Romaine Lettuce
1 cup diced Celery
2 Green Onions, sliced thin
11 oz. Can Mandarin Oranges (drained /chilled)

1/2 cup sliced or slivered Almonds
3 T. Sugar

Dressing:
1/4 cup veg oil
2T. Sugar
2T. White Vinegar
1-2 T. freshly chopped Parsley
S&P
Few drops of Tabasco

Directions:
Directions:
In a heavy skillet, Add 3 T. Sugar with 1/2 cup sliced almonds to a heavy skillet and heat on low to melt sugar and caramelize almonds. Watch carefully so it doesn’t burn. Spoon onto parchment paper or a plate to cool and break into pieces. Set aside.

Mix dressing ingredients in a small bowl or pint jar with a lid. Shake well and chill if desired.

Wash and dry lettuces and tear into bite size pieces. Add to a large salad bowl, adding celery and gr. Onion. Before serving add drained mandarin oranges and cooled carmelized almonds. Toss gently with the dressing.
