4 whole boneless chicken breast about 3 oz. each
4 oz. crabmeat
1 egg
2 tsp. lemon juice
¼ tsp. pepper
¼ cup chopped scallions, chopped fine
1 tbsp parsley, chopped

Save some parsley sprigs for garnish
- paprika

Directions:
Directions:
Pound chicken breast until flattened.

Combine remaining ingredients.

Spread ½ crab mixture on each chicken breast. Roll like jelly roll.

Place chicken in pan sprayed with Pam, seam side down. Sprinkle paprika on chicken. Cover with foil.

Bake 350º for 25 minutes.

Garnish with parsley sprigs and more chopped scallions.
