½ lb bacon, cut into ⅓" pieces
1 sm onion, finely chopped
1 red bell pepper, finely chopped
1 jalapeno, seeded & finely chopped
1 tbsp fresh thyme, chopped
¼ c flour
4 tbsp butter
1 can beer
2 c chicken stock
1 c heavy cream
6 oz sharp cheddar cheese, shredded
4 oz medium cheddar cheese, shredded
2 oz pepper jack cheese, shredded
salt to taste
freshly ground pepper to taste
chives, opt
flat leaf parsley, opt

Directions:
Directions:
In a large soup pot, cook bacon til crispy. Transfer to paper towel.
Drain pig oil to 2 tbsp. Add veggies & cook til tender.
Reduce heat; add butter. Sprinkle flour over & stir to mix.
Add beer, stirring til thickened.
Add chicken stock & cream & stir to combine. Simmer.
Add cheeses, a handful at a time, stirring constantly.
Simmer to melt cheese. Season w/salt&pepper.
Add most of the bacon, reserving some for garnish.
Spoon into bowls & garnish with bacon, chives, parsley.
