3 lb boneless, skinless chicken thighs
Tony Cachere - a lot, Cher!
2 lg Tx sweet onions, chopped
8 c chicken broth
½ c pearl barley
1 lg bell pepper, chopped
1 lg can tomato pieces
2 pkg frozen chopped spinach
1 can cream-style corn
6 fresh corn tortillas, torn into strips

Directions:
Directions:
In large soup pot, saute onion with Tony's.
Add chicken, cut into bite-size pieces. Cook slightly.
Add broth, bring to a boil & cook down by a third.
Add barley & cook on med heat 20 min.
Add pepper & tomato; cook 20 min. Add spinach; cook 20 min.
Stir in corn & tortillas til hot, and serve.
Top with shredded cheddar & chopped green onion.
