Preheat to 350º
Grease bottom & 2" of the side of an 8x4x2 inch pan.

1½ c flour
1½ tsp baking powder
¼ tsp baking soda
¼ tsp ground cinnamon
⅛ tsp salt
1 egg
1 c mashed bananas (3 med)
¾ c sugar
¼ c cooking oil
(sub applesauce for lighter/drier, or butter for richer/heavier)
½ c chopped pecans or walnuts (opt)

Directions:
Directions:
Combine flour, baking powder, baking soda, cinnamon, salt.
Combine eggs, bananas, sugar, oil in separate bowl.
Make a well in dry ingredients; pour wet ingredients all at once.
Stir just until moistened. (batter is lumpy) Fold in nuts.
Spoon into prepared pan.

Optional topping:
Combine 1 tsp cinnamon, 1 c flour, 1 c brown sugar.
Cut into the mix 6 tbsp cold butter.
Sprinkle evenly over batter.

Bake 50 - 55 min.
Test with toothpick until it comes out clean.
Cool in pan on wire rack 10 min.
Remove from pan to wire rack to cool.
Wrap & store overnight before slicing.
