Ingredients: 1.5 pounds boneless, skinless chicken breasts or thighs Kosher salt Black pepper 2 tablespoons unsalted butter 4 garlic cloves, minced or grated 1 cup dry orzo 1 cup dry white wine, such as Pinot Grigio or Sauvignon Blanc 1.25 cups chicken broth 1 (8 ounce) jar marinated artichoke hearts, drained and roughly chopped 1/2 cup pitted green olives 1 tablespoon of lemon zest (or a little less) 2 tablespoons + 2 teaspoons to lemon juice 1/2 cup cubed or crumbled feta cheese, for serving 1 tablespoon chopped fresh dill, for serving

Directions:For the chicken: Brine chicken breasts for 45-60 minutes prior to cooking Pat dry Spray both sides of chicken with olive oil Season both sides of chicken with black pepper Preheat air fryer to 400F for 5 minutes Add parchment paper Cook chicken at 380 degrees for 8-9 minutes
For the orzo: Melt unsalted butter in a skillet Add dry orzo and cook until toasted (2 minutes) Add garlic and cook until fragrant (1 minute) Add the wine to the skillet and scrape up any browned bits from the bottom Stir in chicken broth, artichokes, lemon zest, and lemon juice Increase heat to high and bring to a boil Cook until orzo is finished (11 minutes for tender) Finish with green olives, feta cheese, and fresh dill Serve with chicken
