4 tbsp.or more of olive oil
1 lb. Italian sausage (half lb. hot & half lb. sweet)
2-3 dried chili peppers and/or chili flakes
1 28 oz. can Italian plum tomatoes drained & chopped
1 c. finely minced parsley (or dried)
2 cloves garlic finely minced
2 peppers green or preferably red, sliced thin. You can add a few jarred roasted red peppers
1 tsp. oregano
Salt & pepper to taste
3/4 lb thin spaghetti or linguini
Parmesan cheese & minced parsley for garnish

Bake Sausage with 2 tbsp. of olive oil at 350º for 20-25 minutes or until cooked. & set aside. When cooled, slice thin.

Heat 2 tbsp. olive oil in large skillet at medium high and add chili pepper and cook once they are black remove and discard. Lower heat and add garlic and cook a minute or two. Add tomatoes and parsley and bring to simmer. Add peppers, oregano, salt, and pepper. Simmer gently for about 15-20 minutes. Add sausage and cover to keep warm.

Cook pasta according to package, drain and add to skillet. Mix thoroughly with sauce.

Garnish with cheese and parsley.
