1 TBS olive oil
2 shallots, minced
¼ oz rosemary, finely chopped
1 lemon
24 oz chicken breasts
10 tsp balsamic vinegar
4 TBS fig jam
½ cup chicken stock
2 TBS butter

Directions:
Directions:

Pat chicken dry with paper towels and season all over with salt and pepper. Heat a drizzle of olive oil in a large pan over medium-high heat. Add chicken and cook until browned and cooked through, 5-7 minutes per side. Remove from pan and set aside to rest.
Lower heat under the pan to medium heat. Add shallot, chopped rosemary, and a drizzle of olive oil. Cook, stirring until softened, 2-3 minutes. Stir in vinegar and jam. Simmer until syrupy, about 1 minute. Stir in chicken stock. Let reduce until thick and glossy, about 3 minutes. Turn off the heat and stir in 2 TBS of butter and season with salt and pepper.
