1 LB shrimp
4 T butter, divided
2 T olive oil
½ lemon, zested and juiced
¼-½ t red pepper flakes
1 t kosher salt, divided
½ t pepper, divided
4 cloves garlic, minced
½ small shallot, finely chopped
1 ½ cups orzo pasta
½ cup dry white wine
3 cups low sodium chicken broth
3 cups fresh spinach leaves
1 cup halved cherry tomtoes
¼ cup chopped flat leaf parsley

Directions:
Directions:
In medium bowl stir together shrimp, 1 T olive oil, lemon zest, red pepper flakes, ½ t salt, ¼ t pepper. Set aside to marinade while you prepare recipe, up to 1 hour. Melt butter and remaining olive oil to large skillet. Add garlic and shallots and cook 1 min. Add in shrimp and cook until opaque, about 4 min. Remove shrimp from skillet and cover to keep warm. Add wine to same skillet and simmer over medium/high heat until reduced by half. Stir in orzo coating the pasta with sauce in the pan. Pour chicken broth over orzo and add remaining salt and pepper. Stir and bring to a simmer over medium heat. Cover and lower temperature to med/low until tender and most of the liquid is absorbed, 15-20 min. Fold in spinach, tomatoes, shrimp and parsley. Add lemon juice to taste.
Serve with warm crusty bread.
