1 1/2 cups warm water
2 packages active dry yeast
1/4 cup molasses
1/3 cup sugar
1 TBL salt
1 - 2 Oranges (finely grated orange rind)
2 1/2 cups sifted Rye flour
2 TBL shortening
2 1/2 - 3 cups sifted flour
cornmeal - to sprinkle on top if desired

1. Mix warm water and yeast - let rest until bubbly
2. Stir in - molasses, sugar, salt, orange rind
3. Stir in rye flour and shortening - mix until smooth
4. Mix in with hand - sifted flour - enough to handle easily
5. Turn onto lightly floured board, knead
6. Let rise as you would for other yeast bread - about 1 1/2 hours
7. Shape into 2 round, slightly flattened loaves.
8. Place on opposite corners of greased baking sheet (sprinkled with corn meal if desired)
9. Cover with damp cloth. Let rise about 1 hour
10. Preheat oven to 375 degrees
11. Bake 30 - 35 minutes until light brown
