1 - 8-10 LB PRIME RIB ROAST
COARSE SALT AND PEPPER

16 OZ SOFTENED BUTTER
1/4 CUP PLUS 1TBSP MINCED GARLIC.
3 TBSP ROSEMARY
3 TBSP THYME
2 TSP SALT
2 TSP PEPPER

PREHEAT SMOKER TO 225 FOR INDIRECT HEATING USE A HARDWOOD SUCH AS OAK OR HICKORY FOR SMOKING.

WHILE GRILL IS WARMING UP. PREPARE YOUR ROAST. TRIM EXCESS FAT FROM TOP OF THE ROAST. SEASON ALL SIDES WITH SALT AND PEPPER.

IN A SMALL BOWL COMBINE BUTTER, GARLIS, HERBS, SALT, & PEPPER. SLATHER THE ENTIRE ROAST WITHTHE MIXTURE.

PLACE ON A ROASTING RACK ABOVE THE BAKING SHEET. ROAST NEEDS TO BE ELEVATED. SMOKE UNTIL THE INTERNAL TEMPERATURE OF THE ROAST IS 120 FOR RARE OR 128 FOR MEDIUM DONENESS. PLAN ON ABOUT 35 MINUTES PER LB.

REMOVE THE ROAST TO A CUTTING BOARD. ALLOW TO REST FOR 20 MINUTES.

WHILE THE ROAST IS RESTING, TURN UP THE TEMPERATURE TO 400 DEGREES. RETUR ROAST TO SEAR UNTIL YOU REACH AN INTERNAL TEMPERATURE OF 130 FOR RARE 135 FOR MEDIUM RARE AND 140 FOR MEDIUM. THIS GOES QUICKLY SO KEEP AN EYE ON IT.

REMOVE LET REST FOR 15 MIN THE SLICE AND SERVE
