1 pkg Trader Joe’s Party Meatballs
2 t olive oil
1/2 c onion, diced
2 stalks celery, sliced
2 carrots, diced
15 oz crushed tomatoes (retain juice)
16 oz tomato sauce
6 c beef broth
1 t Italian seasoning
3/4 c dry short pasta
2 T fresh parsley for serving
Parmesan cheese for serving (optional)
Salt and pepper
Directions:
Directions:
Sauté onion, celery and carrots in olive oil. Add remaining ingredients and simmer until pasta is fully cooked. Top with parsley and Parmesan cheese.
