1 cup graham cracker crumbs
2 TBS powdered sugar
½ cup melted butter
16 oz. cream cheese, softened
1 cup sugar
4 large eggs
2 tsp vanilla
pinch of salt
Sour Cream Topping:
1 cup sour cream
1 TBS sugar
½ tsp vanilla

Directions:

Mix together graham cracker crumbs, powdered sugar, and butter; press into the bottom and sides of an 8-inch springform pan. Combine cream cheese, sugar, eggs, vanilla, and salt; mix until smooth. Pour into prepared crust and bake at 325º for 75 to 90 minutes, or until a cake tested comes out clean. Cool for 15 minutes. Mix together the ingredients for the topping and spoon over the cake. Bake for 5 minutes more. Chill overnight before removing the outer ring of the spring-form pan.

Optional Berry topping:
You can use any combination of fresh berries. Wash fruit and dry it on paper towels. Cover the entire top of the cake with berries (usually 2 boxes will do it). Heat 3 TBS of red currant jelly with 1 TBS of water. Let it cool and brush onto fruit letting the jelly drip between the berries. Make sure you "paint" all the berries. Chill and serve.
