3 pieces of bacon, diced
3 TBS olive oil
½ Onion, finely chopped
1 rib of celery, chopped
1 carrot, peeled and chopped
2 small zucchini, chopped into 1 inch pieces
1 small can of diced tomatoes or 3 fresh
5 oz bag spinach, washed and chopped
3 cloves garlic, minced
1 ½ tsp dried basil or 1 TBS fresh
½ tsp fresh rosemary, finely chopped
6 oz can tomato paste
6 cups chicken broth
1 can white or kidney beans, drained (optional)
¼ small pasta (optional)
Salt and Pepper to taste

Directions:
Heat olive oil in the bottom of a soup pot. add the chopped bacon and cook until lightly brown. Add onion, celery, and carrot and cook slowly until lightly browned, about 10 minutes. Add the garlic and cook for 2 minutes. Add tomatoes, spinach, basil, rosemary, and tomato paste. Once well combined, cover and cook over low heat for 10 minutes. Add chicken broth, zucchini, beans, and salt and pepper to taste. Bring to a boil. Reduce heat and simmer until the vegetables are tender, skimming off any foam that rises to the top. Cook pasta in a separate pan, add to soup just before serving.
