Lemon Mousse Recipe

6 large eggs yolks
¾ cup granulated sugar
3 TBS lemon zest
½ cup fresh lemon juice (3-4 lemons)
1 pinch salt
¾ cup heavy whipping cream
2 TBS Water
1 tsp plain gelatin
½ cup unsalted butter

Directions:
Directions:
Pour water into small bowl sprinkle the gelatin over the water and let stand 10 minutes. place bowl in larger bowl hot water and stir until fully dissolved and liquid is clear.

Melt butter in large heavy saucepan over medium low heat. Remove from heat and whisk in the sugar, zest, lemon juice and salt. whisk in the egg yolks until smooth. cook the mixture stirring constantly until it thickens and leaves a path on the back of a wooden spoon when a finger is drawn across it. do not let the mixture boil!

Remove pan from heat and stir in the gelatin mixture. Immediately pour through a strainer into a bowl. Let cool to room temperature. whisking occasionally.

Beat cream with electric mixer until stiff peaks form. add cream to lemon mixture in 3 batches gently folding in with rubber spatula.

Divide the mouse between 4 stemmed glasses and cover. Refrigerate at least 2 hours to 2 days until thoroughly set and chilled.
