½ cup unsalted butter
1 TBS finely grated lemon zest
1¾ cup all purpose flour
¼ cup granulated sugar
1 pinch salt

Preheat oven 350ºF. Have ready 11" tart pan.
melt butter in small saucepan over medium heat. Add 1 tablespoon zest and let stand 5 minutes.
Whisk together the flour, salt and sugar. slowly add the butter mixture with small stream. Using a fork stir until the until the dough comes together. transfer to the tart pan and press evenly in bottom and sides
Bake for 20 minutes until the crust is light golden brown. Let cool on a wire rack while making the filling.

1 TBS lemon zest
1 cup Sugar
1 pinches salt
6 large eggs
1 cup fresh lemon juice
½ cup Whipping cream
confectioners sugar for dusting

Directions:
Directions:
Process the remaining jest and 1 cup sugar in a food processor until zest if finely ground. Whisk the eggs and the zest mixture with lemon juice and salt in bowl until smooth. beat cream with mixer until soft points form. Whisk the cream into the egg mixture until well blended.

Place a baking sheet in oven , place crust on the baking sheet and pour filling into the still warm crust. Bake for 25-30 minutes until pie is just set in center. Let pie cool on wire rack. Just before serving sift confectioner's sugar over tart. cut into wedges and serve.
