Ingredients:
Ribeye steaks thick cut
Bell pepper
Onion
Mushroom
Blue cheese (or goat cheese is my favorite)
Onion soup mix
A1 (or Heinz) steak sauce.

Directions:
Set over to 350 degrees to preheat.

Cut up your bell pepper, onion, and mushrooms into very tiny bits. Mix with bleu cheese crumbles or goat cheese in one bowl.

Melt ½ cup of butter and mix the A1 sauce and onion soup mix with the melted butter.

Split down the sides of your steak making a pocket in the steak. Stuff the pocket with the bell pepper, onion, mushroom, and cheese mix.

In a cast iron skillet, add 2 tablespoons of the melted butter mix and olive oil. On high heat, sear the ribeyes for 2 mins on each side. Then turn the heat down to medium. Add the butter mix on top of both sides every time you turn it for another 3 minutes.

Next, put the skillet in the oven for 10 minutes. Medium well for 10 minutes. Well done for 15. Keep basting the meat with the butter from the skillet.
