2 large eggs yolk
pinch of dried mustard
1/4 cup of mild olive oil or grapeseed oil
2 tsp lemon juice
2 tsp white wine vinegar
3 garlic cloves
salt and pepper

Directions:
Directions:
1) Egg yolks and oil should be at room temperature before prep. Place the yolk in a bowl with mustard and a pinch of salt and whisk.
2) Gradually whisk in the oil, drops at a time, then a trickle. As the Mayonnaise starts to thicken, thin it down with a few drops of Lemon juice or vinegar.
3) When the mayonnaise is as thick as soft butter, stop adding oil. Season the mayonnaise to taste and add more lemon juice or vinegar.
4) Crush the garlic with the blade of a knife and stir into the mayonnaise. For a milder flavour, blanch the garlic cloves twice in boiling water, then puree them before beating into the mayonnaise.
