Flour
Salt
Pepper
1-1.5 pounds chicken- thinly sliced
Olive oil
Sliced mushrooms, i used a large Costco size container
Fresh spinach 12-16 ounces
3/4 cup dry white wine
1 1/2 cups heavy cream
1 cup finely shredded Parmesan cheese

Directions:
Directions:
1. dredge the chicken in flour that has been seasoned with salt and pepper
2. Brown til golden brown in olive oil and remove from pan
3. Sauté mushrooms until tender
4. Add the wine and cook down about 2 minutes
5. Add the heavy cream, bring to a gentle simmer
6. Wilt in the spinach
7. Stir in the Parmesan cheese til melted
8. Add the chicken cutlets back in i til heated through
