Preheat 350º
Prepare 3 - 8" cake pans w/parchment paper circles & grease.

2½ c all purpose flour
2½ tsp baking powder
½ tsp salt
¾ c unsalted butter, room temp
1½ c sugar
3 tbsp vegetable oil or butter
1 tbsp vanilla extract
4 lg eggs
1¼ c milk

Directions:
Directions:
Combine flour, baking powder, salt & set aside.
Add butter, sugar, oil, extract to lg mixer bowl.
Beat til light & fluffy 2-3 min.
Add eggs, one at a time, scraping bowl to incorporate.
Add half of dry & mix. Slowly add milk. (It will curdle).
Add remaining dry mix. Scrape & incorporate. Do not overmix.

Divide the batter among 3 pans.
Bake 22-25 min. (do a toothpick check)
Remove, cool 2-3 min; remove from pans to cooling racks.
