Ingredients:  
Ingredients:  
1 c finely shredded green cabbage
3-4 green onions white part only
1/2 c chopped onion or leek ( or grated zucchini
6 pc bacon cut into thirds ( or baby shrimp)
1/2 c flour ( or flax seed)
1 t each salt , pepper
/4 c water
2 to 3 eggs
2 T coconut oil or vegetable oil

Home made Hoisin Sauce:
Mix together
2 T Tamari
2 T orange juice
1 T minced fresh ginger
and 1 T minced garlic

Topping options:
Hoisin sauce
avocado mayonnaise
sliced green onion
kimchi
Apple sauce with a dollop of yogurt
sesame seeds

Directions:
1.Thinly slice cabbage very fine like coleslaw
2. Thin slice onions of leeks. set aside
3. In a mixing bowl, add flour, salt, pepper. Whisk in water and eggs. Adde veggies stir to mix evenly.
4. In a large skillet heat 1 T of oil place half of the batter in pan and flatten to make a pancake. Place 1/2 of bacon strips on top and cover pan but allow top to steam.
5. Fry for about 3-4 minutes of until golden brown. Flipping can be tricky, use a very large spatula to turn the whole pancake over in one swift flip. Cover again for 2-3 minutes until bacon has browned ( lift an edge to check). Repeat
6. Serve immediately. Brush with Hoisin sauce., and dollop of mayo, sprinkle with green onion tops and add a dollop of kimchi on the side.
