2 lb ground beef
1 white onion, diced
1-2 cloves garlic minced
2 cans tomato sauce
2 carrots, peeled and diced (for color not taste)
1 head of cabbage, chopped
1 C rice, dry
8 C of beef stock (2 boxes)
salt to taste
pepper
3 tomatoes, diced

Directions:
Directions:
1. Add the beef to a soup pot, sprinkle with salt and pepper. and brown.
2. Add the onion and garlic and simmer until the onions are barely translucent.
3. Add the tomato sauce, rice and carrots and mix well.
4. Add 1/2 the cabbage and stock. Stir to mix.
5. Add the rest of the cabbage on top of the soup.
6. Hard simmer for 30-45 minutes until cabbage is cooked.
7. Add the tomatoes and serve.

Made Scott Bevans' soup recipe. Comfort food for winter. Reminds me of my Polish grandmother's cabbage rolls. I made half the recipe and it was still a too huge amount. Will be freezing some. Oh, I added a dash of dill and a lot less salt!
