1 T butter
1 T olive oil
1 garlic clove finely minced
1 pound large shrimp, peeled
salt and pepper to taste
1/2 cup finely chopped whole scallions
1 large tomato, peeled, chopped, or1/2 cup drained canned tomatoes
3/4 cup feta cheese
1T chopped parsley
1/2 tsp. Oregano
1/4 cup Marsala or dry Sherry
Hot cooked rice or pasta

Melt butter in a 14” skillet. Add olive oil and garlic. Simmer until garlic is tender, do not brown. Add the shrimp, salt and pepper. Simmer for 2 minutes or until shrimp is partially cooked. Add the scallions, tomato, parsley, oregano, feta and wine. Cook for 2 to 3 minutes until shrimp turn pink. Do not overcook. Serve over rice or pasta.
