1 pound pkg Acini De Pepi pasta
1 c. sugar
2 Tbsp. flour
2 eggs
1 3/4 c. pineapple juice (*reserved)
1/2 tsp. salt



3 cans mandarin oranges
2 (20 oz) cans sliced pineapple (or tidbits) drained
1 (20oz) crushed pineapple -drained
1 c. coconut
1 c. miniature marshmellows (optional)
1 (9oz) pkg Cool Whip .

Directions:
Cook pasta according to package directions.

Open cans of fruit and drain. *Reserve pineapple juice for sauce. Mix sugar, flour, eggs, pineapple juice and salt in a sauce pan and cook stirring constantly until thickened. Refrigerate sauce overnight, as well as the fruit and pasta (in seperate bowls).
Before mixing pasta/fruit with sauce be sure to drain again. Mix sauce and Cool Whip together and combine with pasta. Add coconut and marshmallows if desired.
