Lemon Poppy Seed Muffins Recipe

1 3/4 c. flour
3/4 c. sugar
1 t. baking powder
3/4 t. baking soda
1/4 t. salt
1/4 c. poppy seeds
1 egg
1 c. plain or vanilla yogurt
1/3 c. butter, melted
2 T. grated lemon peel
1 T. lemon juice







Topping:
1/3 c. lemon juice
1/4 c. sugar

Directions:
Directions:
Combine flour, sugar, baking powder, baking soda, salt and poppy seeds; set aside. Combine egg, yogurt, butter, lemon peel and lemon juice; beat until smooth. Stir in dry ingredients, just until moistened. Fill greased muffin tins 2/3 full.
Bake at 400º for 18-20 minutes or until golden brown and muffins test done. Cool for 5 minutes.
Meanwhile, in a saucepan, combine the lemon juice and sugar; cook stirring constantly until the sugar is dissolved. Use a toothpick to poke several holes in each muffin. Spoon the glaze over each muffin. Let cool completely.
