Begin with fresh peanuts that have been washed and dried - not fresh from the garden.
For each 2 lbs of peanuts:
Using a stockpot, boil 16 cups of water & then dissolve 1 c salt.
Remove from heat, stir in peanuts.
Use a bowl filled with water for weight, or a pie plate, on top of peanuts, to keep them submerged overnight. You may want to stir them a couple of times.

Drain peanuts in colander, shaking off excess liquid.
Dry the nuts for 2 or 3 days, if you don't have a dehydrator.
The shells should be dry & crunchy.

Arrange peanuts in a single layer on a baking sheet.
Bake 350º for 15-25 minutes, to taste, stirring twice during the process.

Cool completely, store in an airtight container for up to a month, or in the fridge.
