1 lb. (450g) Salmon Filets
2 Tbs. olive oil
1 Tbs. olive oil or unsalted margarine
¼ tsp. red pepper flakes
1 tsp. smoked paprika
1 tsp. Italian seasoning
1 medium onion, chopped
4 cloves garlic, minced
4 Roma/plum tomatoes, chopped
6 oz fresh spinach (baby spinach ok, too)
¼ cup fresh basil leaves, chopped
½ cup vegetable or chicken stock (or dry white wine)
2 Tbs. olive oil, optional

Directions:

1. Add 2 Tbs of olive oil to a large skillet, on low-medium heat. Add the salmon filets, red pepper flakes, paprika, Italian seasoning, and salt in the skillet and cook about 5 minutes until salmon is cooked through.
2. In the same skillet over medium heat, add 1 tablespoon olive oil or melt 1 tablespoon margarine. Add garlic and onion and cook until translucent and fragrant. Add chopped tomatoes, chopped fresh basil leaves, fresh spinach, and vegetable or chicken stock (or white wine). Cook on medium heat for about 3-5 minutes until spinach wilts just a little and tomatoes release some of their juices. Adjust seasoning, if necessary. (I didn't - it was yummy as written!)
3. Add cooked salmon back to the skillet, resting on the spinach. If you want, drizzle with extra olive oil if desired. Serve immediately!

Place salmon skin side down first and sear for at least 5 minutes. Flip the filet and cook for another 5 minutes. Remove skin at this point and flip fish once more to get a sear on the now skinless side.

I served this with pan-roasted potatoes.
