2 pounds ground beef
1/3 cup chopped onion
1 teaspoon minced garlic
3 tablespoons taco seasoning
2 quarts beef stock
2 cups frozen corn
1 can (15 ounces) black beans, drained and rinsed
1 can (14 ounces) diced tomatoes
1 cup tomato puree
2 teaspoons lime juice
2 teaspoons salt
1 cup whole grain rice

Brown the ground beef, onion, and garlic. Drain. Add the taco seasoning, and mix together. Add the beef stock, corn, beans, diced tomatoes, tomato puree, lime juice, salt, and rice.

Bring to a boil, and then cover and simmer for 30 minutes until the rice is done.
