"Easy Peel" Hard boiled Eggs/Deviled Eggs Recipe

Ingredients: 1 dozen Hard Boiled Eggs 1/2 cup Mayonaise 2 Tbsp. Dijon mustard 2 tsp. Tabasco 1/4 tsp. Dry Mustard 1/2 tsp. Salt or to taste
For Topping:
1/2 tsp. Cayenne pepper or Paprika 2 Green Onions - chopped finely 4 strips of crispy Bacon - chopped finely

Directions:Bring to a boil (1/2) cup of water. (Do not cover eggs with water). Place eggs COLD, (directly for refrigerator), into boiling water with slotted spoon, cover. Return water to a boil then turn to medium-low to where it is just at a constant simmer for 12 minutes, keep covered. Prepare ice water bath in large bowl. Remove eggs with slotted spoon and place in cold water until eggs are fully cold. Now you can crack and peel while under running tap water. After peeling set on several layers of paper towels to dry.
Deviled Eggs:
Cut eggs in half and place whites on a serving platter and yolks in a bowl. Using a fork, smash the yolks until smooth. This can also be don in a Cuisinart. Mix mayonnaise and rest of ingredients thoroughly into yolk mixture. Place ziplock bag with a small hole in one corner. Put yolk mixture in ziplock bag and press all the air out. Begin filling your egg whites with yolk mixture; sprinkle with cayenne or paprika and top with chopped green onions and crispy bacon. |

Notes: Remember cook only 12 minutes in simmering water. This steams the eggs which helps in the peeling. Since I have been using this method, no broken eggs!
