½ cup olive oil
1 cup flour
2 medium onions - chopped
2 medium green bell peppers - chopped
1½ cups chopped celery
1 cup green onions - chopped
3 cloves garlic - minced
1 pound Italian sausage - browned and drained
1 pound shrimp
Creole seasoning to taste
2 teaspoons thyme
1 quart water or broth
3 cans (28 oz each) tomatoes
4 pounds chicken drumsticks
Roasted chilis to taste
2 bay leaves
1 pound frozen okra
1 pound crab

Directions:
Directions:
Make roux with oil and flour until it is dark red brown. Remove from heat and stir in celery, onion, peppers, garlic and thyme.

In large pot add water, tomatoes, chicken, sausage and chilis and the vegetables with the roux. Bring to boil then simmer until chicken is cooked through. After chicken is cooked, add okra, shrimp and crab.

Serve over rice.
