8 Yukon Gold potatoes, unpeeled, diced small
1/2 medium-sized zucchini, diced
1 red bell pepper, diced
1/2 red onion, diced
1/2 cup cremini mushrooms, diced

1 (15 ounce) can pinto beans (about 1.5 cups), drained and rinsed

1.5 teaspoons chili powder
1 teaspoon garlic powder
3 garlic cloves, minced
Freshly ground black pepper

I used the dicing attachment on the Breville food processor to get all the vegetables diced the same size. That made it cook evenly and the vegetables tasted better in very small pieces.

Preheat oven to 375 and line a baking sheet with parchment paper. Spread the potatoes on the baking sheet and bake for 15 minutes.

Place the zucchini, bell pepper, onion, mushrooms, beans, chili powder, garlic powder, and minced garlic in a bowl and toss until the vegetables and beans are coated. Once the potatoes have baked, remove from the oven and add the bean mixture to the pan, spreading out everything evenly.

Place the pan back in the oven and bake for an additional 30-45 minutes until everything has softened.
