1 whole cut up chicken or you can use a rotisserie chicken
2 stalks celery, finely diced
3 whole green onions, finely diced
2 cups red grapes, quartered
3/4 cup mayonnaise
1/2 cup plain yogurt or sour cream
Juice of 1 lemon freshly squeezed
1 tablespoon brown sugar
Kosher salt to taste
Fresh ground black pepper to taste
Small handful of fresh dill, minced
Cayenne pepper, to taste
1/2 cup of slivered almonds or pecans

Directions:

1. Rinse chicken thoroughly and place in large pot of water. Turn on heat and bring to boil. Reduce heat and simmer until chicken is done. (About 45 minutes)

2. Remove chicken from pot, remove the chicken from the bones and chop into bite size chunks and set aside.

3. Chop all of the fruits and vegetables and place them in a bowl with the chicken.

4. In another bowl mix mayonnaise, yogurt (or sour cream), lemon juice, brown sugar,
salt and pepper, and cayenne pepper.

5. Add the dill.

6. When the dressing tastes right, pour it over the chicken/ vegetables, fruit mixture and stir gently until throughly mixed. Stir in almonds or pecans.

7. Allow the chicken salad to chill for several hours or even overnight.
