1 Pkg Frozen Artichoke Hearts
½ Cup Vegetable Oil
2 Cups Bisquick
1½ Cups Milk
2 Eggs
½ Cup Grated Parmesan Cheese
2 Cloves Garlic, Minced
2 Tbsps Fresh Parsley, Chopped
Salt & Pepper To Taste
Garlic Salt to Taste

Directions:
Heat oil in deep frying pan (or wok) over medium-high heat.

Mix ingredients, except artichoke hearts, together to make batter. The batter should be the consistency of pancake batter. If it is too thick add milk, too thin, add a little more Bisquick.

Dip artichoke hearts into batter, and place in a hot oil and fry over medium-high heat until golden brown on both sides.

Auntie Sara Memory: Each year, Auntie Angela and I would stand over the stove with two pans of hot oil frying the artichoke hearts, very hot and a lot of oil splatters.

One year, Uncle Pat won a large wok with a fuel tank (no more pans) and found a solution to the this process - use the wok to fry the artichoke heats. From then on, this job has transitioned to the men, each year, bringing in the youngest to learn how to fry the artichoke hears in record time. One year, Gabriel learning the trade, went out on a ledge and fried up Oreo cookies. He does like to to think outside the box.
