Instant Pot:
1 cup water

Turkey:
1 T. olive oil
2 tsp. poultry seasoning
3 tsp. sage
1 tsp. salt
½ tsp. black pepper
1 - 2-6 lb. turkey breast
3-4 large potatoes

Optional Add-Ins:
1 small onion, chopped
2 garlic cloves, minced

Gravy:
⅓ cup butter
⅓ cup flour or cornstarch

Put the water in the Instant Pot and put the wire rack trivet in also. Rub the turkey breast with the olive oil and rub the spices all over it. Place the turkey breast in the pressure cooker, however it fits best. Also add in the onion and garlic, (if using). Put the lid on the Instant Pot and set the steam release knob to the Sealing Position. Press the Pressure Cook, or Manual button and then the + or - button to choose the time in minutes (about 25 minutes for 2-4 lb. breast and 30 minutes for a 5-6 lb. breast). When the cooking cycle has ended, let the pot sit and natural release for 15 minutes. Then manually release the remaining steam. When the pin in the lid drops, open the pot. Take the temperature and determine if it is fully cooked. (If it’s below 165º, put the lid back on the pot and set the Instant Pot to cook for a couple more minutes and let it naturally release for 10 minutes. Remove the turkey breast to a baking pan.

Gravy:
In a small saucepan, melt the butter and flour or cornstarch. Add the gravy and stir occasionally until well mixed.
