2 large onions chopped
4 tablespoons butter
2 eggs
½ cup evaporated milk
1 pound package corn muffin mix
One 4 ounce can diced green chilis
One 17 ounce can creamed corn
½ teaspoon cumin
1 cup low fat plain yogurt
2 cups grated Cheddar cheese

Directions:
Directions:
Preheat oven to 425º Saute onions in butte and set aside. Mix eggs and milk, add muffin cornbread mix, creamed corn, cumin and chilis. Pour into greased 13 x 9 pan. Spoon onion over the top. Spread on yogurt and sprinkle the cheese on.

Bake for 35 min or until puffed and golden. Let stand 10 min. Can be frozen and reheated.
