1/2 pound ground beef, optional
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 tsp basil
1 tsp parsley
4 TBS butter, divided
3 cups chicken broth
4 cups diced potatoes (1 3/4 lbs)
1/4 cup flour
8 oz velveta cheese, cubed
1 1/2 cups milk
3/4 tsp salt
1/4 tsp pepper
1/4 cup sour cream, optional

Directions:
Directions:
1. Brown & drain beef. Set aside.
2. Sauté onion,carrots,celery,basil & parsley in 1 TBS butter until tender
3. Add broth, potatoes & beef; bring to a boil.
4. Reduce heat,cover,&simmer for 10 minutes until tender.
5. In a small skillet, melt 3 TBS butter, stir in flour, cook for 5-10 minutes.
6. Add to soup.
7. Add cheese & milk.
8. Simmer until cheese melts.
9. Add salt& pepper.
