Dark Chocolate 225g/8oz.
Strong black coffee 3 tbs
Butter40g/1 1/2 oz
Eggs/separated 4
Brandt 2 tbsp

Directions:
Directions:
Combine chocolate and coffee in a heatproof bowl.
Put the bowl over a saucepan half filled with water,cook, stirring constantly, till chocolate is melted and the mixture is smooth.
Best in the butter bit at a time, until thoroughly blended. Add bested egg yolk and cook beating constantly for 5 minutes or until mixture is thickened and smooth.
Remove pan from heat and bowl from pot. Stir in the brandy and set the mixture aside for 30 minutes to cool completely.
Meanwhile beat the egg whites until they form diff peaks.quickly fold the egg whites into the chocolate mixture.
Spoon the mousse into individual serving glasses and chill for 4 hours or overnight.

Many chocolate mousse recipes have whip cream folded into them. For those who eat dairy, it provides a light chocolate treat. For those of us who are non dairy, this traditional French Mousse is ideal.
