Ingredients: 1 1/2 cups (or more) chopped seedless watermelon 1 scallion, thinly sliced 1/4 cup cider vinegar 1/4 cup extra-virgin olive oil salt and freshly ground black pepper to taste

Directions:1. Puree the 1 1/2+ cups watermelon until smooth in a blender or food processor. Strain through a sieve to make 1 cup juice. 2. Sauté the scallion in 1 teaspoon olive oil in a small saucepan over medium heat until soft. Add the watermelon juice and vinegar and bring to a boil over medium-high heat. Lower the heat and simmer until reduced to about 3 tablespoons, stirring occasionally, 20-25 minutes. Pour into a small bowl to cool. 3. When cool, whisk in the remaining oil, salt and pepper. |

Salad |

Ingredients: |
Ingredients: 3 cups 1-inch cubed seedless watermelon 4 ounces baby greens ( I like a mixture of arugula and baby spinach, but almost any type of greens will work) 1 cup crumbled feta cheese 1/2 cup sliced almonds, toasted 1/2 cup slivered sweet onion or chives additional salt for dusting (I like black lava salt, but Fleur de sel or Maldon salt would also be nice, or use any type of large crystal salt)

Directions:1. Combine the greens and onion in a bowl. Add about two tablespoons of the dressing and toss. Arrange the tossed greens and onion on chilled salad plates. 2. Place the cubed watermelon on the greens. Drizzle with additional dressing. 3. Sprinkle with feta and toasted almonds. 4. Dust with coarse salt of your choice. Serve immediately
*You can make the dressing ahead and keep it refrigerated for a couple of days. I double the dressing recipe, toast more almonds and sometimes keep cut-up watermelon in the fridge for a couple of days in order to have everything ready to make the salad at a moment's notice. |

Notes: This is one of my summer addictions. I cannot get enough of this salad. Although the combination of ingredients might sound odd, this is a positively luscious and refreshingly cool salad.
