Ingredients: 6 Boneless, Skinless Chicken Breast Halves
1 stick Butter
6 slices Mozzarella Cheese
All-Purpose Flour for dredging
1 Egg, beaten
1 cup Bread Crumbs
1 tbsp. Fresh Parsley, finely minced
1 tsp. Fresh Sage, minced; OR ¼ tsp. Dried Sage
1 tsp. Fresh Rosemary, minced; OR ¼ tsp. Dried Rosemary
1 tsp. Fresh Thyme, minced; OR ¼ tsp. Dried Rosemary
½ cup Dry White Wine

Directions:1. Preheat oven to 350ºF
2. Flatten each chicken breast between two sheets of plastic wrap with a kitchen mallet or a heavy pan
3. Divide half of the butter between the six chicken breasts. Salt and pepper the chicken. Place 1 slice of cheese on each chicken breast. Roll the breasts over the butter and cheese and tuck in the ends
4. Dip each chicken breast in flour, then egg, and then crumbs
5. Arrange in a buttered baking dish. Melt the remaining butter. Add the herbs to the melted butter
6. Bake the chicken for 30 minutes, basting with the butter mixture
7. Pour wine over the chicken and bake 20 minutes longer, continuing to baste with any remaining butter mixture. Serve while hot |

Notes: While on many long road trip to college in the sixties, I listened to and memorized far too many songs from Paul Simon and Art Garfunkel. This recipe pays homage to the memory of one of those songs, "Parsley, Sage, Rosemary, and Thyme". It's an old fashioned recipe that holds many fond memories.
