14-16 oz tofu
2 tablespoons oil
½ cup each Jack and Cheddar cheese
1 can (15 oz) tomato sauce
2 teaspoons chili powder
2 teaspoons paprika
2 teaspoon cumin
1 cup sour cream
1 can olives - diced
2 onions - softened
1 can 4 ox green chilis

Enchilada Filling:
Rinse tofu in cold water, drain well. Cut into ½ in cubes. Put in bowl and add sour cream, 1 onion, chili peppers, cumin and 1 teaspoon chili powder.

Sauce:
Mix tomato sauce, 1 onion, 2 tablespoons oil, paprika and 1 teaspoon chili powder.

Fill tortillas with filling. Pour sauce over. Bake at 350º for 30-40 minutes.
