1 roasted turkey carcass (or breast)
1-2 lg onions not peeled and rough chop
2-4 celery ribs rough chop
2-4 med carrots rough chop
2-3 bay leaves
Turkey neck, wing tips
1/2 bunch parsley with stems
12 stems thyme optional

Directions:
Directions:
Put all in to stock pot. Cover with cold water to cover bones by inch.
Bring to boil, quickly reduce to low simmer. Look for small bubbles around the edges. Gently cooking makes cleaner stock. No need to cover.
Simmer at least 2 hours and up to 4.
If any scum, skim it off.
Strain stock.
Cool then refrigerate. Remove fat after chilled.
Refrig up to 7 days or freeze for 1 year.
