2 lbs ground beef (or 1lb. beef & 1 lb pork)
10oz chicken livers (I omitted this one)
1 Tbsp. olive oil
2 Tbsp. gee
1 onion - finely chopped
3 cloves - minced
2 carrots - shredded
2 cups spinach - chopped (I added some Asian greens)
2 cups zucchini - shredded
1 tsp. dried oregano
1/2 cup flour or ground pork rinds
2 large eggs
3 Tbsp. ketchup (recipe below)

Ketchup:
2 Tbsp. coconut aminos
1/4 cup tomato paste
1 Tbsp. balsamic vinegar
1/2 tsp. garlic powder
1/2 tsp. mustard powder
1/2 tsp onion powder
4 pitted dates
3 Tbsp. water
salt & pepper to taste

Prepare ketchup first
In a high speed blender add all of the ingredients and blend until smooth

Meatloaf:
Preheat oven to 375º
In a medium skillet add 1 Tbsp oil and saute the livers, add 1/2 tsp. salt. Cook for about 8 minutes. Once cool, blend in a blender, set aside.
Saute onions in 2 Tbsp. ghee. Once the onions are soft add carrots, spinach, garlic and salt. Remove from heat.
In a large bowl, combine the beef, 1/3 cup ketchup, eggs, flour, oregano, mustard powder, garlic powder, salt and pepper.
Add liver and cooked onion mixture. Mix well with hands.
Transfer mixture into loaf pan or casserole dish. Bake 25 minutes.
Take our and spread remaining ketchup on top. If it starts to brown too soon cover with foil. Bake for another 40 minutes or until center reaches 160º.
Allow meatloaf to rest 10 minutes before slicing. This helps to keep it together.

This recipe is a little bit confusing regarding the ingredients and when to add them so I just use my best judgement.
